I've made a casual Griffin deck before. it's good for flavor, but winning was difficult. However, since winning is what you obviously want to do (I'm going to assume you want an all-white deck):
You can never go wrong with several copies of Spirit Mantle
(won me many of the games I did win). Honor of the Pure
and Ghostly Prison
are excellent all white staples. I've also found that Norn's Annex
Can be quite irritating for people. Fledgling Griffin
was much better than I originally expected, while Mtenda Griffin
was not nearly as good as hoped. Hope this helped you.

Griffin Rider (obviously)Zuberi, Golden Feather Griffin Canyon Most Griffin's cost about 4 mana, so that's where your critical cards are going to be.
