Yes, you're allowed to do that. This is because Scampire's triggered ability doesn't target the card you put a sticker on. A triggered ability with targets needs to have its targets chosen at the time it's put onto the stack, but since Scampire's ability doesn't have any targets that means you make the choice for it as the ability resolves. You're allowed to make responses before the trigger starts resolving.

So if I sacrifice my creatures (except Shirei, Shizo's Caretaker) on a Phyrexian Altar while I have Shirei, Shizo's Caretaker on the battlefield and all my creatures, including Scampire come back to life at the next end step, Scampire's ETB triggers but there's no creatures in my graveyard now. Can I sacrifice some of the creatures that were brought back to life on my Phyrexian Altar before Scampire's "put a sticker on a creature in your graveyard" effect goes off so I'll now have a creature in my graveyard for it to target?

TLDR:

Shirei, Shizo's Caretaker on battlefield

Sacrifice other creatures including Scampire on Phyrexian Altar

Creatures re-enter the battlefield

Before Scampire's ability resolves, sacrifice other creatures on the Phyrexian Altar

Have Scampire's ability target newly sacrificed creature in my graveyard to put a sticker on it

Is that possible?
