Pyromancer Ascension

Say my GY is empty and i cast Wild Guess and discard another wild guess to pay the additional cost. Will that put a counter on Pyromancer Ascension?

Yes. Abilities that trigger when a spell is cast trigger after the casting process is complete. This includes cost payments, as paying costs is the final step in the casting process. Pyromancer Ascension will see the second Wild Guess in your graveyard at the time its ability would trigger, so the ability triggers.
From the Comprehensive Rulebook:
601.2h Once the steps described in 601.2ag are completed, the spell becomes cast. Any abilities that trigger when a spell is cast or put onto the stack trigger at this time. If the spell's controller had priority before casting it, he or she gets priority.

Yup. You pay costs before the spell is considered cast, so by the time pyromancer's checks there is a copy of wild guess in the graveyard.
