Mirrage mirror trigger/stack interaction

So If I were to have Mirage Mirror, Pride Sovereign and Anointed Procession in play as well as 6 mana of apropriate colors. Could I copy Pride Sovereign exert the Mirage Mirror copy then pay 2 to copy Anointed Procession while the replacement effect was on the stack and effectively make 8 1/1 cat tokens for 5 mana? Or do I lose the target of the replacement effect when the Mirage Mirror becomes Anointed Procession?

If you copy something with Mirage Mirror, it loses its copy ability, not allowing you to copy something else after a single instance of its ability has resolved. Also, replacement effects don't use the stack, but modify the original event(s) that they apply to. Last but not least, you may only activate the Mirage Mirror copy of Prode Sovereign if you controlled it since the beginning of this turn, as otherwise you won't be allowed to pay the cost due to summoning sickness.

With all of that out of the way - you can get 8 1/1s by copying either permanent, and exerting all Pride Sovereigns you have - if you copied the Sovereign, you will have two abilities creating two 1/1s, where if you copied the Procession, you will get twice twice (four times) the amount of tokens you would normally get. Both result in having 8 tokens, although tapping one more Pride Sovereign than you'd probably like to, judging from your question.

With the board state set up in the original question, assuming the Mirage Mirror and the Pride Sovereign are past summoning sickness, you can create 12 cat tokens. First, activate the mirror copying the Pride Sovereign, before that resolves activate the Mirror copying the Procession. Allow the 2nd activation to resolve. You know have "2" processions. Activate and resolve the real Sovereign, creating 8 tokens. Allow the first mirror activation to resolve, activate the copied Sovereign, creating 4 more tokens. Both the Mirror and the Sovereign won't untap as normal during your next untap step.
