If my opponent casts a Lure on a 1/1 then attacks with all his creatures and I Lightning Bolt said 1/1 creature, do I get to block however I want?

If the creature is no longer there to be blocked in the declare blockers step, you're allowed to block however you see fit.

Tl;dr: you can't be forced to block a non-existent creature.

What Raging_Squiggle said is true for all have-to-block effects, including the one you asked about, but also Bloodscent, for example, which creates a requirement with a duration.

Lure doesn't create a duration, so the first and foremost reason why you can block any creature you want when you got rid of the creature enchanted by it is that when the creature dies, Lure will be put into it's owner's graveyard for not being attached to a legal permanent, and since it's not on the battlefield anymore, it's static ability doesn't work anymore.
