Instant speed sacrificing

If I have Dictate of Erebos and a sac outlet on the field, and my opponent has Yahenni, Undying Partisan and sacrificable creatures on the field, if I sacrifice a creature with Ayli, Eternal Pilgrim making him need to sacrifice a creature, can he declare which creature he's going to sacrifice, and then sacrifice it instead with Yahenni, Undying Partisan and nullify the sac from Dictate of Erebos the way I can sacrifice a blocker with Ayli because it's an instant-speed sac outlet?

No, it doesn't work that way. When the triggered ability of Dictate of Erebos resolves, your opponent simply follows the instructions and sacrifices a creature. There's no "declaring a creature to sacrifice" and then interrupting the action. Also, players don't have priority to make responses in the middle of a spell or ability resolving.
