If I Polymorph opponents creature while I have [willbreaker] out?

If I Polymorph opponents creature while I have Willbreaker out, does that trigger willbreaker? because I targeted an opponents creature, giving me control of it, then exiling it, causing me to search my deck and put into play a creature because I was in control of said creature before exile?

Yes, that is exactly how it would happen. The ability of Willbreaker will be put on the stack and resolve before Polymorph. Since you are now the controller of the creature, hte creature is destroyed and you search your library for a replacement.

Yes, you would be the controller of that creature when it is destroyed.

Cast Polymorph, it targets opponent creature, and Polymorph's effect goes on the stack.

Triggered ability of Willbreaker goes on the stack, above Polymorph, and resolves, giving you control of the target creature.

Polymorph resolves, with you being the controller of the creature.

It is important to note that Polymorph neither exiles nor allows you to search. It attempts to destroy the creature and then the creatures controller reveals card until they reveal a creature. This is important because indestructible can save the creature, and you don't get t choose the creature you get.
