If I mind control an opponents Solemn Simulacrum and it dies, do I draw a card or does my opponent?

The mind control effect was using Grim Return from his graveyard.

When a card refers to "you" it is referring to its controller. The card is telling you, the controller, what to do, as it is your responsibility now. Whether you gained control from Grim Return or Control Magic or what have you, the text on Solemn Simulacrum is now speaking to you.

Exceptions would have phrasing such as "When Solemn Simulacrum dies, its owner may draw a card." That would cause the person who actually owns the card in question to draw instead of the controller, but it is fairly rare to see that sort of thing.

It is noteworthy to point out that owner of a card (in the context of a game) refers to the player that starts the game w/ that card in the deck/library they are playing with, not necessarily who literally "owns" the card.

For instance Players A and B are playing a game w/ 2 decks both owned by Player A. If Player A uses an Unsummon on a creature that is "owned" by player B, it goes into the hand of Player B, not A.
