Does ink trader nephilim trigger "when a creature becomes the target of an instant or sorcery spell"?

If you cast a spell with one target targeting Ink-Treader Nephilim with a card like Willbreaker or Wild Defiance in play, would the Willbreaker or Wild Defiance trigger?

Yes, that works. "Becomes the target" means something goes from not being a target to being a target. Since that's what's happening here with the copies created by Ink-Treader Nephilim , Willbreaker and Wild Defiance will trigger appropriately for each creature that becomes a target of one of the copies.
