Can I Use a Ceature Effect In Response to a Removal Cast On It?

Super new, probably a dumb question.

If I have, for example, a Thallid Shell-Dweller on the field and it has a removal such as Path to Exile cast on it, can I, in response, dump all of its spore counters to create Saproling tokens before it gets removed?

It doesn't say "Activate only as sorcery" so I assumed it does, but I didn't know if abilities go onto the stack like spells do and therefore resolve first.

Yes you can. If an ability doesn't say to activate it only any time you could cast a sorcery you can activate it at any time you could cast an instant.

Abilities do go on the stack like spells. However even if the source of an ability were removed before the ability resolves, abilities exist independently of their sources and will resolve unless countered even if the source is removed.

So if I triggered the ability and then it got exiled, it would still produce tokens?

Yes, once you activate the ability (activated and triggered abilities are different things, so it's important to make the distinction) removing the source will do nothing to change the fact that the ability is now on the stack. It will resolve unless something specifically counters it (there are very few effects in the game that are able to counter an ability).
