I don't have a creature in play.

I cast Fleshbag Marauder. Before the sacrifice resolves, I cast Essence Flux. Making me and my opponents sacrifice two creature.

Was that a legal move?

Yes, that's fine.

If a resolving spell or ability gives you an impossible instruction then you only do as much as possible. The triggered ability on Fleshbag Marauder doesn't require targets, so it doesn't matter if you don't actually control any creatures when it's time to sacrifice one as the trigger resolves.
