Would I got infinite tokens of Brudiclad equipped with Helm of the Host

Scenario: I have Brudiclad, Telchor Engineer on the battlefield equipped with Helm of the Host . At the beginning of the combat, Helm of the Host makes a copy of Brudiclad, Telchor Engineer , then the Brudiclads make 2/1 Blue Myrs. I choose to make my tokens into the nonLegendary token of Brudiclad, Telchor Engineer . My question is: Can the new Brudiclad, Telchor Engineer (s) make the 2/1 blue myr tokens, then choose Brudiclad token, thus making an infinite combo of tokens or is the beginning of combat end the moment the initial chosen token was picked?

I believe the start of combat only happens once. Since you made the new legendary dude after combat had already started so your new at the begging of combat effects won’t trigger.

You would only get two total tokens (one Brudiclad, one myr).

Helm of the Host and Brudiclad, Telchor Engineer both have triggered abilities that trigger "at the beginning of combat" to create a token.

What happens is the Combat Phase starts. All abilities that trigger "at the beginning of combat" trigger at once here, and as the controller of both of the triggers in question, you can put them on the stack in whatever order you want. We'll say you have the Helm trigger resolve first, creating a non-legendary copy of Brudiclad.

The important thing here is this token copy of Brudiclad does not also trigger to make a myr token. The "beginning of combat" has already passed, and so this Brudiclad's ability will not trigger.

Then your legendary Brudiclad's trigger resolves, creating one myr token and giving you the option to have all your tokens copy one of your tokens. Even if you choose to have all your tokens (however many there may be) copy your non-legendary Brudiclad token, again, the beginning of combat has already passed, and the new Brudiclad copies will not trigger.
