What happens if Cogwork Assembler’s target is sacrificed?

If I activate Cogwork Assembler targeting an opponents Mind Stone and my opponent sacrifices the Mind Stone in response, is the copy created based on last known information, or does it fail?
Sorry, a follow up question: What happens if there is another legal target, can I copy the other target, or is the target selection locked in when the ability is activated?

You have to stick with the original choice. The only way to change a target is to use some other card's effect that specifically tells you to change a target.

Cogwork Assembler's ability will fizzle for having no legal targets when it tries to resolve.
