what are legal creature types for Harsh Mercy

I was recently playing an artifact deck of mine when my opponent cast Harsh Mercy . i wanted to choose artifact for my creature type but they argued that i must choose a type after the dash on the creature card.

for example i had Solemn Simulacrum and Sharding Sphinx in play. can i choose artifact or must i choose sphinx or golem and only save one creature?

In your example it would be either sphinx or golem. Harsh Mercy refers specifically to the subtype that creatures have after the dash. (elf, goblin, soldier) Artifact isn't a subtype of the creatures, it's a type of card/spell/permanent.
