Use Planeswalker Abilities without a target?

An example I mean is as if I put out a Ajani, Caller Of The Pride, can I use its +1 ability (Put a +1 +1 counter on target creature) without me controlling any creatures? or do I have to target a creature, so then I would need to enchant my opponents creature?

A spell or ability with targets can only be played if you have enough legal targets to choose from. However, in your example with Ajani, Caller of the Pride you're allowed to choose 0 targets because it specifically says "up to one target creature". If we were talking about a post-Armageddon Garruk Wildspeaker , you wouldn't be allowed to activate his +1 ability because it says "two target lands" and doesn't give you the option to choose fewer than two targets.
You can use double square brackets to link cards. It makes it a bit easier for people to understand the question and come up with the right answer.

Just a quick nitpick; nowhere in your given situation is anything enchanted. Things are only enchanted by aura spells. The creature that is targeted by Ajani would get a +1/+1 counter, which has nothing to do with enchantments.

Normally, if something says "target," you need to choose a target. Note, however, that Ajani, Caller of the Pride does not say "Put a +1 +1 counter on target creature" as you quoted, but rather "Put a +1/+1 counter on up to one target creature." Up to one can be either one or zero, so it specifically allows you to choose no targets.
