If I use Saheeli, Sublime Artificer's ability to turn a token into a copy of, say, Utvara Hellkite, does it still count as a token?

Yes, the token that turns into an Utvara Hellkite from Saheeli, Sublime Artificer will still be a token.
Any permanent on the battlefield that isn't represented by a Magic card is a token. This is an indelible trait of that game object. The converse is also true. Any permanent on the battlefield that is represented by a Magic card is not a token.
