Removing Counters

So my girlfriend came up with a pretty cool concept/trick using Hex ParasiteMTG Card: Hex Parasite and any creature with Undying.

If an opponent was to Day of JudgmentMTG Card: Day of Judgment and I had both a Hex ParasiteMTG Card: Hex Parasite and a Geralf's MessengerMTG Card: Geralf's Messenger (with a +1/+1 counter already), can I remove the counter and let Day of JudgmentMTG Card: Day of Judgment resolve, thus allowing my Geralf's MessengerMTG Card: Geralf's Messenger to return to the battlefield again?

Yes. If you respond to Day of JudgmentMTG Card: Day of Judgment by activating Hex ParasiteMTG Card: Hex Parasite's ability to remove the +1/+1 counter from Geralf's MessengerMTG Card: Geralf's Messenger, Messenger won't have any +1/+1 counters on it at the time it dies to DoJ. Therefore, it will return to play via undying.
