Question about the stack and triggers

If I use Eldritch Evolution on a Kitchen Finks to put an Archangel of Thune onto the battlefield, does finks come back after Thune ETB, netting me life and counters?

The first step of casting any spell is to move it from the zone it's in (in this case probably your hand) to the stack, after which you eventually pay costs. This includes sacrificing the Kitchen Finks, which triggers its Persist ability, which will be put on the stack (above Eldritch Evolution) when everything regarding Eldritch Evolution's casting is handled.

Assuming nothing else happens, Persist resolves and returns the Finks to the battlefield, triggering it's ETB, which is put on top of the stack and will resolve next, getting you 2 life. Finally, Eldritch Evolution will resolve, allowing you to put an Archangel of Thune on the battlefield and exile Eldritch Evolution.

As you probably guessed, since you gained life before the Archangel entered the battlefield, nothing triggers its ability at this point, and you don't get any counters either.
