Perplexing Chimera

If I cast Golgari Charm choosing to destroy target enchantment, targetting Perplexing Chimera and there are no other enchantments on the field. If my opponent decides to switch control of his Chimera for my Charm, does my opponent get to choose another mode on Golgari Charm, like regenerate each creature he controls?

Nope, the mode is locked in when the spell is cast. This true for anything that changes targets or makes a copy of a spell (unless it specifically says that you're casting that spell from another zone. e.g. Isochron Scepter).
