Mirage Mirror

On my opponent's turn, after he declares his creature spells can I pay two mana for Mirage Mirror's ability and copy Trespasser's Curse and double the effect, or is that something I can do between his upkeep and casting creature spells?

You can do this but it won't produce the result you're looking for. The problem is that your plan involves turning Mirage Mirror into an Aura, but it's not attached to anything. An Aura that isn't attached to anything gets put into the graveyard as a state-based action.
If you were copying a non-Aura permanent with this ability - like Suture Priest, etc. - then you could do it either way. You could respond to the creature spell before it actually resolves and enters the battlefield, or you could do it before your opponent's precombat main phase starts (during either their upkeep step or their draw step).

You can activate the ability whenever you have priority (including either the upkeep or in response to a spell), but it's not a good idea in this case: Mirage Mirror will be put into your graveyard as a state-based action because it's now an aura that isn't attached to anything.
