Lithoform Engine and Mirrorwing Dragon

So my question relates to Mirrorwing Dragon and how it would Interact/ combo with Lithoform Engine first activated ability which is able to copy a Triggered ability such as Mirrorwing Dragon

"Whenever a player casts an instant or sorcery spell that targets only Mirrorwing Dragon, that player copies that spell for each other creature he or she controls that the spell could target. Each copy targets a different one of those creatures."

For example would I be able to duplicate the occurrence of Mirrorwing Dragon triggered ability for the following :

Cackling Counterpart with Lithoform Engine to get my field doubled twice ? Vastwood Fortification  ^Flip with Lithoform Engine to get double counters?

Or would the copied ability just fizzle/not trigger as you are Targeting something other than Mirrorwing Dragon whose effect is very clear on Mirrorwing Dragon being the ONLY targert and you have to assign a new target?

Lithoform Engine activated ability stated below :

"2, Tap: Copy target activated or triggered ability you control. You may choose new targets for the copy."

I have developed a modern deck around Mirrorwing Dragon and after picking up Lithoform Engine I just wanted to checkout a new combo /interaction. I have other uses for Lithoform Engine in the deck but I am most curious about its interaction Mirrorwing Dragon. I

Mirrorwing Dragon's trigger doesn't target. Even if it did target, you don't HAVE to change the target.

With Cackling Counterpart you will make 1 copy of Mirrorwing Dragon, and 3 total copies of each other creature you control (Copied Mirrorwing Dragon trigger makes a copy for each creature out when it resolves. Original Mirrorwing Dragon trigger makes a copy for each creature out when IT resolves, including the copies made by the Cackling Counterparts from the copied trigger, that will resolve before it does.)

Vastwood Fortification  ^Flip will put 1 counter on Mirrorwing Dragon and 2 counters on each other creature you control.
