If I have Geier Reach Bandit Flip on the field and on my last turn nobody played a spell,but in-between my two turns both me and other players have casted spells does the bandit transform?

The ability that checks for the number of spells cast last turn triggers at the beginning of every upkeep, not just yours. If you're Player 1 and no one (including you) cast a spell during your turn, then Geier Reach Bandit Flip will transform at the beginning of Player 2's upkeep. If any particular player casts two or more spells during Player 2's turn, then Vildin-Pack Alpha will transform at the beginning of Player 3's upkeep, etc.
