If I play "Chasm Skulker" and "Fathom Mage," when I draw next turn will I Auto-Mill?

I'm new so I don't know how to designate cards in blue text, but Chasm Skulker's ability says "When you draw a card, put a 1/1 counter on Chasm Skulker," and Fathom Mage has "Evolve" and "Whenever a 1/1 counter is placed on Fathom Mage, draw 1 card." I'm wondering if I can stop the cycle by casting any types of instants or sorceries or do their effects take priority over all other actions?

You may be confused. These cards don't make a cycle. Evolve only triggers when a creature enters the battlefield, and Fathom Mage 's other ability only triggers when a +1/+1 counter is placed on Fathom Mage . Chasm Skulker 's ability places counters on Chasm Skulker .
Drawing a card through Fathom Mage 's ability will cause Chasm Skulker 's ability to trigger. However, there's no cycle. Also, these abilities are triggered abilities, which means they use the stack. Players can cast instants or cards with flash or may activate abilities in response to triggered abilities. Sorceries may only be played during your own main phase while the stack is empty and you have priority.

I'm not sure what kind of cycle you're referring to, as these cards don't make an infinite combo. Evolve only triggers when another creature you control enters the battlefield; not when a creature you control gets bigger.
"Priority" is a term in Magic that means that a player is allowed to take actions; not the usual English meaning that something is more important than another. No object on the stack resolves until all players pass priority, starting with the active player.
