If I have Eldrazi Mimic in play and play another colorless creature and in response to the trigger my opponent casts Grasp of Darkness and remove the target, will the mimic die?

So, let's say I have an Eldrazi Mimic on the battlefield and then play a Thought-Knot Seer. I activate the mimic's ability to change its power and toughness, and with that trigger on the stack, my opponent casts Grasp of Darkness, targeting the Thought-Knot Seer. Of course the seer will die to having 0 toughness, but what happens to the mimc? Does it get to be a 4/4, does it stay a 2/1, or does it also become a 0/0 and die?

Notice that Eldrazi Mimic's ability says "you may change". As the ability resolves, you decide whether or not to actually change the Mimic's P/T to whatever creature triggered it. In this situation the Mimic will become a 0/0 if you do choose to change its P/T, so you probably shouldn't do that.

No, you trigger the ability when the Thought-Knot Seer enters the battlefield (regardless of your intentions to change or not), and that's when your opponent has the chance to cast Grasp of Darkness. Once the ability resolves you get to look at what the power/toughness of the creature is and decide then whether or not to change. 'May abilities' always trigger, and get put on the stack (provided they have targets), and it's on resolution that you choose whether or not to do what they say. As a shortcut, most people don't announce triggers they have no intention of following through on, but even if you do intent to follow through, you are not locked in until after all responses have been resolved.

If you choose to apply the triggered ability's effect, your Mimic will become a 0/0 and be put into your graveyard as an SBA.

This is because before the ability resolves, TKS will already be put in your graveyard for having 0 toughness, therefore the ability will have to use the last known information regarding TKS's power/toughness which, at the time of dying, was 0/0.
