If a creature I reanimate with Ashiok, Nightmare Weaver would die while I control Kalitas, Traitor of Ghet, would it get exiled and would I receive a 2/2 zombie?

While I understand that I control the creature at the time of its death, at what point does the opponent gain control of it?
No, because Kalitas, Traitor of Ghet looks at creatures you're opponents control, not own. If it were creatures they own, regardless of who controls it it would look more like Anafenza, the Foremost's ability.

The opponent doesn't gain control of it; it goes from the battlefield under your control to its owner's graveyard, where it has no controller. A card only has a controller if it's a permanent (an object on the battlefield) or a spell (a card on the stack). So, no, it wouldn't be exiled and you wouldn't get a token.
"108.4. A card doesnt have a controller unless that card represents a permanent or spell; in those cases, its controller is determined by the rules for permanents or spells. See rules 110.2 and 111.2."
