The color words are "white," "blue," "black," "red," and "green." When Swirl the Mists enters the battlefield, you choose one of those words.
From then on, all instances of color words on spells and permanents are changed to the chosen color instead.
For example, you play Swirl the Mists and name white for its ETB ability. For as long as Swirl the Mists is in play, any time a spell or permanent references any color word, that reference is replaced with a reference to the chosen color word instead. Your Bad Moon now gives all white creatures +1/+1 instead of giving all black creatures +1/+1. Your opponent's Red Elemental Blast now says "Choose one - Counter target white spell; or destroy target white permanent."
