How does Prey upon work with Ublockables?

So in my deck I have Prey Upon and Ulvenwald Tracker , how does that work say if I choose to fight my strangleroot giest with Prey Upon vs Invisible Stalker ?
Ahh okay yeah thats why I chose to use Invisible Stalker in my example instead of Latch Seeker Thanks!

Being unblockable only matters when a creature is an attacker during combat. "Fight" is completely separate from combat, doesn't cause creatures to be considered either attacking or blocking, and the damage dealt while "fighting" doesn't count as combat damage.
There's another problem with your example, however. Invisible Stalker has hexproof, meaning if your opponent controls it, you're not allowed to target it with Ulvenwald Tracker or Prey Upon ..
