Does Gilded Goose ability count as tapping a creature for mana and thus trigger Leyline of Abundance ?

Yes, the Goose's last ability counts.

"Tapping (something) for mana" means to activate a mana ability with in the activation cost. Gilded Goose 's last ability makes mana, doesn't target, isn't a loyalty ability, and has the symbol in the cost, so activating it counts as "tapping a creature for mana" and will trigger Leyline of Abundance .
