If am attacking with 1 creature, and I have a sublime archangel + akrasan squire, would the squire give +2/+2 total?

Not a big EDH player myself so can't contribute to how well she'd stand up, although she's squishy with 3 toughness, prone to spears etc, so having her as a commander is probably not a great idea, from playing with her, I've found she's at her best in esper token gen with unblockable, if you look at my Ocelot's Esper Exalted deck build you can see her potential

She's a very good card for an Exalted EDH deck.
(Also, you can see in the reminder text for her "everything else gets exalted" ability the note that multiple instances trigger separately, which backs up OcelotsRevolver's answer.)

I'm assuming that Kogarashi is probably far more reliant to give advice on an EDH deck than I am, having only ever played 2 EDH games with a friend's deck that I have no idea what any of the cards do haha

Coolio.. well i am having her in my new edh with Rafiq of the Many

She's definitely a god fit for Rafiq EDH if you're planning to leverage the deck for Exalted. So few of the creatures with exalted are actually any good outside of that, so being able to use solid utility creatures and still have them benefit your attacker via the Archangel is quite handy.
Also, make sure you run plenty of either good evasion creatures, or some solid evasion spells like Artful Dodge since you're only attacking with one guy, you'll run into multiple blocks a lot of the time otherwise.

Like I said, I'm not used to the format of EDH, so I apologise JMANNO33O but I did state, I don't know much about EDH

You actually would have 3 triggers of Exalted. Once from Akrasan Squire + one from Sublime Archangel + one more from the squire courtesy of the angel for +3/+3
Also note that on Sublime Archangel it does state that Exalted does stack.

The exalted trigger stacks, so yes, the Akrasan Squire already has exalted, the Sublime Archangel gives it an extra exalted trigger, meaning a lone attacking creature would get the exalted trigger twice off the Akrasan Squire
