Enduring Ideal + Starfield of Nyx during first upkeep

can I immediately use the ability of Starfield of Nyx by the time it was put into play by Enduring Ideal?
No. Starfield of Nyx has an ability that only triggers right when your upkeep starts. This also happens to be when spells with Epic go off after casting. By the time the Starfield hits the battlefield, it's too late for it to trigger that turn.

Use Paradox Haze and you could during the 2nd upkeep

Unfortunately no. The beginning of your upkeep has already passed, so the trigger will not be put on the stack until your next upkeep.
