Does Veteran's Armaments trigger for cards like Launch the fleet for example?

I'm running a soldier token deck with Leonin Shikari. I'm pretty sure the attachment trigger works, but for creatures entering in attacking would it trigger the ability "Whenever this creature attacks or blocks it gets +1/+1 for each attacking creature. I need clarification please

Please link all cards relevant to your question: Leonin Shikari, Veteran's Armaments
Since none of the cards you mentioned actually puts a creature into play attacking, let me also use Brimaz, King of Oreskos as an example.

When Brimaz attacks, it will create a 1/1 token that's also attacking after attackers are declared. That token entering the battlefield will trigger the Armaments's ability, and you may attach it to the token. However, in order for the Armaments's first ability to trigger, you would have to attack with the token after it was already attached. Not only is that not possible in this scenario, but you also never declared the token as an attacker in the first place - instead, it was put on the battlefield attacking.

As you mentioned Leonin Shikari - that card is pretty insignificant for this interaction, but just to clarify: A creature that has the Armaments equipped when attacking will get +1/+1 for each attacking creature, but re-equipping the equipment (no matter how fast) won't get you an extra trigger.
