Does sacrificing target a specific creature?

If I cast Goblin Grenade, does it specifically target the creature I sacrifice to use Goblin Grenade?

The answer is no. Things only target when they actually use the word "target." Sacrificing a goblin is an additional cost to cast Goblin Grenade. You choose which goblin you want to sac as you're paying the cost to put Goblin Grenade on the stack.

Ok I cast Goblin Grenade on Zad, Hedron Grinder. His ability stats "Whenever you cast an instant or sorcery spell that targets only Zada, Hedron Grinder, copy that spell for each other creature you control that the spell could target. Each copy targets a different one of those creatures." Does this mean I get to copy Goblin Grenade onto all of my goblins?

If you're asking whether you get to sacrifice all your Goblins for 5 damage each, then no. It doesn't work that way.
Goblin Grenade only has one target: the creature or player it's dealing 5 damage to. If you sacrifice Zada, Hedron Grinder to pay the additional cost of Goblin Grenade then nothing special will happen. You'll only have one Grenade. If you sacrifice another Goblin and target Zada with the Grenade for damage then you'll get copies of the Grenade pointed at all of your other creatures... which honestly doesn't sound like a very good idea.

There is a few fringe cases where killing all his creatures could be useful, like Blood Artist on his side of the field, but yeah, bit of an odd way to do it.

I don't think it works that way. You sacrifice a goblin card and then Goblin Grenade deals 5 damage to target creature of player. It doesn't target the creature you sacrifice as an additional cost. :D
