does corpsejack menace's (and others) ability work with Animar?

Hello,

Since Corpsejack Menace does not target the creature it doubles counters on, does it get past animar,soul of elements protection from black?

do other cards with similar non targeting effects, (in my case, Winding Constrictor, Mayael's Aria, and Juniper Order Ranger) also get past the protection from (color) restriction?

Yes, they all work.

Protection stops 4 things: damage, enchanting/equipping, blocking, and targeting. The cards you mention don't do any of those things, so protection won't interfere with how they work.
