Copys like Glasspool Mimic Flip and flash?

So I have let's say Thieves' Guild Enforcer on the board .. it has flash ... I may have Glasspool Mimic enter as a copy of a creature I control... does this include me being able to play it with flash?

Unfortunately not. Glasspool Mimic would need to inherently have Flash in order to be cast at instant speed. Because it doesn't have Flash or some similar text, it can only be played at the normal casting timing for a creature spell.

Clones become copies of the things that they're targeting as they enter the battlefield, not after they've entered (707.5). Glasspool Mimic cannot gain flash from the Enforcer since it doesn't become a copy of it until it is on the stack, while it's entering. However, Glasspool Mimic will copy the Enforcer's ETB effect.
