Confused when it comes to ETB effects with gaining control.

If I steal a creature with Act of Treason or another gain control spell, does the creature "enter the battlefield under my control"? Could I uses riku-of-two-reflection's second ability and copy the creature? I've gotten different answers on this.

No. The creature does not leave the battlefield, it only switches controllers.

A permanent isn't considered to have "entered the battlefield" unless it just came to the field from another zone. In this case, it was already on the battlefield and just changed control. Riku of Two Reflections ' ability won't trigger, so you can't copy the stolen creature.

Great, thanks! So this raises another question in my mind... If a creature my opponent controls has lost summoning sickness, and I take control of it with something that does not give it haste, like, say, Roil Elemental 's landfall ability, can I still attack with the stolen creature during the turn I stole it, or does it have summoning sickness?

It still has summoning sickness.

302.6. A creature's activated ability with the tap symbol or the untap symbol in its activation cost can't be activated unless the creature has been under its controller's control continuously since his or her most recent turn began. A creature can't attack unless it has been under its controller's control continuously since his or her most recent turn began. This rule is informally called the "summoning sickness" rule.

Since the creature you returned was not under your control since the beginning of the turn, you may not use any of its tap/untap abilities or attack with it. You may, however, use activated abilities of that creature so long as they do not require you to tap or untap it.
