can you sacrifice with another source in response to evoking a creature

I wanted to be able to evoke Mulldrifter and then sac it with birthng-pod in response to it being sacked. legit?

Birthind Pod can only be activated when you could play a Sorcery, and Sorceries can only go on an empty stack. I assume that the 'evoke' trigger uses the stack, so I very much doubt it. Someone else will have a fuller answer for you.

Also, as it enters play you sacrifice it, so even with instant-speed sac you can't have it both ways.

Actually, the sacrifice part of Evoke is a triggered ability, so you can put other effects on the stack above it or use it as a cost for instant-speed abilities.

To sum everything up:

In terms of your specific question, no, you can not sacrifice Mulldrifter with Birthing Pod after paying for it's evoke cost. After it resolves and enters the battlefield, the triggered ability to sacrifice it goes on the stack. Since Birthing Pod can only be activated when sorceries could be activated (empty stack), you can not use it.

In terms of generalities, you can sacrifice Mulldrifter say with Viscera Seer after paying the evoke cost to cast. The sacrifice is a triggered ability and will go on the stack and can be responded to by instants.
