Can I sac in response to soul ransom sacrifice?

If an opponent discards to activate Soul Ransom 's last ability, can I sacrifice the creature Soul Ransom controls as an interrupt with something like Bubbling Cauldron or Corpse Blockade ? If so, does he still discard two cards and do I still draw two?
Here is how this would work. Your opponent would discard two cards to activate Soul Ransom's effect. The ability goes on the stack, but does not resolve yet. You now have a chance to activate Bubbling Cauldron or another sacrifice ability. Assuming you do, you pay the costs (among which is sacrificing the creature) and that ability goes on the stack. Assuming nothing else happens, the stack then begins to resolve, first doing whatever sac ability you chose, the attempting to do Soul Ransom's ability. You cannot sac Soul Ransom, since it has already been put in the graveyard as a SBA when the creature died, but since the card draw is not contingent on it, you still draw two cards.
tl;dr yes, you can sac the creature after your opponent discards two cards and still draw two card's yourself, although your opponent would be a fool to do so.
(Sidenote: interrupt is an old rules term that no longer exists. The proper term is "at instant speed".)

the discarding portion is the cost of an activated ability, which means once the cards are discarded the ability goes on the stack. before it resolves control would pass to you and you can, at this time, choose to sacrifice it if you wish. however, because the creature will be gone before ransom's ability resolves, there will be no creature to sacrifice; and i believe because it states the controller has to sacrifice it, it would be the same as something like Infernal Plunge where there is no way around sac'ing a creature if you want the spell to resolve. being that there is no creature to sac, the second part of the ability cant happen and it fizzles.
so in short: your opponent discards 2 cards and you get whatever benefit from the sac you chose to do.
