what happens to a Maze of Ith and an Urborg, Tomb of Yawgmoth with a Blood Moon on the field?

why would blood moon's ability stop urborg's ability from applying?

Now that I think about it, dependency doesn't factor into this, but the result is the same. If you apply the effects in timestamp order, it ends up not mattering whether Blood Moon or Urborg entered the battlefield first.
If Urborg has an earlier timestamp, then you apply its ability first, which turns lands into swamps, then you apply Blood Moon's ability next, which causes Urborg to become a mountain and lose its other abilities.
If Blood Moon has an earlier timestamp, then you apply its ability first, which causes Urborg to become a mountain and lose its other abilities.
Here's the rule that makes this happen:
305.7. If an effect sets a land's subtype to one or more of the basic land types, the land no longer has its old land type. It loses all abilities generated from its rules text and its old land types, and it gains the appropriate mana ability for each new basic land type. Note that this doesn't remove any abilities that were granted to the land by other effects. Setting a land's subtype doesn't add or remove any card types (such as creature) or supertypes (such as basic, legendary, and snow) the land may have. If a land gains one or more land types in addition to its own, it keeps its land types and rules text, and it gains the new land types and mana abilities.

If an effect says a land becomes one of the basic land types without saying "in addition to its other types", then it loses all other abilities it has. The type-changing effects of Urborg and Blood Moon are applied in the same layer, but you don't use timestamps to decide which effect is applied first because Urborg's effect is dependent on that of Blood Moon, so Blood Moon is applied first.
Maze and Urborg have the type "Mountain" (they keep their names), the ability to tap for Red mana, and no other abilities.
