0 toughness and convoking

Hello,

Virulent Plague is on the battlefield, and someone casts Hordeling Outburst with 1 mountain open to be used.

The tokens would die, before any player can respond to anything (or cast Stoke the Flames with the convoke), as the creatures go to the graveyard for having 0 or less defense as a state-based action, correct?

Yes. You don't receive priority (and thus can't begin casting a spell) until after the game checks "state-based actions" i.e. does all the "rules garbage collecting" to bring the game back to a reasonable state, which includes sending 0-toughness creatures to the graveyard.

Yup. Your assertion is correct for the reason you stated. State based actions are checked and the tokens are moved to the graveyard before any abilities can be used or spells can be cast.
