I think F7 is really on to something with that delineation. A lot of our (largely enjoyable) bickering tends to stem from Grumpy Old People(tm) like me shaking their fists saying “Goblins aren’t green, and turn that music down!” It pains me to say it, but it’s probably smart to let creature types like minotaurs branch out to at least one extra color, just for the sake of the game. Historically, minotaurs are dark DARK critters so giving them that back-up color makes sense (though I still love Labyrinth Minotaur so much). I long for the simple old days where zombie goblins had to be made yourself, via Animate Dead and some elbow grease...and having them be just barely strong enough to hand a Goblin Grenade to. I will admit JUST THIS ONCE that the M:tG universe is probably stronger because of this expansion.

Minotaurs really want to be Rakdos, but there have been a few in blue such as Labyrinth Minotaur.

As long as Little Minotaur has three or more +1/+1 counters on it, it has ": +1/-1 until end of turn"
