Yes, that's how it works. You control Erithizon so you control the ability, even though your opponent is choosing the target.

So Willbreaker steals opponents creatures if they become the target of a spell or ability that I control and when Erithizon attacks it puts a +1/+1 counter on TARGET defending players choice. So they would have to choose a creature to put a counter on and if they chose one of their creatures Willbreaker steals it. I am 99.9999999% sure this is correct, but I just want to double check.
