Will Abyssal Nightstalker's effect work if I cast ninjutsu on him?

If I were to attack someone with Abyssal Nightstalker , and he wasn't blocked, then activate the ninjutsu effect of something like Ink-Eyes, Servant of Oni , returning him to my hand, would the defending player still have to discard a card?

Yes. Ruling from Gatherer:

"An ability that triggers when something "attacks and isn't blocked" triggers in the declare blockers step after blockers are declared if (1) that creature is attacking and (2) no creatures are declared to block it."

The ability will trigger pre-damage, so when the trigger goes on the stack you can respond with the Ninjitsu ability.

Thank you! I did read that on gatherer, but I wasn't sure if the response would cancel out the original effect.

Note that you don't cast ninjutsu. You activate it.
