Does Weirding Wood allow you to make 2 colorless mana so you can cast an eldrazi? ie..Kozilek, the Great Distortion.

No. Colorless is not a color.

Effects that instruct you to choose a color are referring to the five colors: white, blue, black, red, and green. Multicolored, "any color," and colorless are not colors.
