if i have Herald of the Pantheon and Enchanted Evening on the field and i cast any creature would i gain 1 life since its a enchantment or since it was cast as a regular creature wouid i not gain life?

Herald of the Pantheon cares about casting enchantment spells. Enchanted Evening's ability states that it only affects permanents. Your spells will be unaffected, so only those cards that are naturally enchantments will trigger Herald of the Pantheon's ability.
