How does Provoke mechanic timing goes?

Say I declare Lowland Tracker as an attacker.

Then I proceed to target my opponent's tapped Elvish Mystic with Provoke.

Can he/she tap the elf for mana once it gets untapped by Provoke, hence leaving it unable to block Deftblade Elite?

The alternative would be that Provoke does the untapping and the blocking simultaneously, leaving no time for my opponent to tap the Elf for mana.

Yes, your opponent can do that. Provoke triggers in the declare attackers step of combat and the ability will also resolve in that step. Everyone will get a chance to make more responses before the game moves on to the next step, meaning your opponent can activate Elvish Mystic before it's time to declare blockers.

If you untap Elvish Mystic with provoke from Lowland Tracker it has to block Lowland Tracker if able, not Deftblade Elite. As was stated before Elvish Mystic can indeed be tapped for mana again making him unable to block. I feel it may have been a typo in the OP, but thought I would clarify incase not or so that anyone who later sees this is not confused as to how provoke works.

Oh yeah, a typo. I switched to Lowland Tracker in order to avoid the 2nd ability in Deftblade Elite hehe. Thanks anyway.
