Do You Still Have to Pay The Cost?

If I cast a card with Affinity, say Myr Enforcer, when I have 7 other artifacts on the battlefield, but then the opponent cast Hurkyl's Recall, do I have to pay the difference?

Cost payment is the final step in the casting process. Once a spell is cast, it's locked in. Your opponent won't have priority to cast anything until the casting process is complete, at which time Hurkyl's Recall will do nothing to your spell. You don't have to retroactively pay more for a spell if something happens that would make that spell cost more if you cast it now.
