Wrexial, the Risen Deep and Double Strike

I am looking for some clarification regarding the timing of spells cast from Wrexial, the Risen Deep 's triggered ability and the double strike mechanic.
If Wrexial, the Risen Deep has double strike and deals combat damage, can two sorceries be cast at instant speed, during the combat phase?
Or does it mean that I can cast two spells from the graveyard before the end of my turn.
You can cast each spell only when Wrexial's ability triggers. In this case it triggers twice because of double strike. You can cast any two instants/sorceries from their graveyard when it triggers, and of course sorceries can be cast this way.

Yes, but deleteme is also asking if a sorcery can be cast during combat as an instant, and I don't believe it can.

Yeah it can, the ability doesn't let it cast it any other time than on the resolution of the abiltiy.
From Gatherer extra ruling:
If you want to cast the targeted card, you cast it as part of the resolution of Wrexial's triggered ability. Timing restrictions based on the card's type are ignored. Other restrictions are not (such as "Cast [this card] only during your end step").

So a more specific use case that I am interested in is if I can first target Mind Grind , a sorcery with X in it's casting cost, to fill the graveyard with more cards to target from the second instance of the triggered ability?

Just to clarify what I'm sure JMANNO33O means. Wrexial, the Risen Deep 's triggered ability goes on the stack, during the first strike combat damage step, and then proceeds to resolve if everyone passes priority.
You may then chose and cast an instant or sorcery card during the resolution of the ability. After the first strike combat damage step, the Wrexial hits again during the regular combat damage step, and once again his triggered ability goes on the stack. Upon the resolution you chose a second instant and sorcery and cast from the opponent's graveyard.
Timing restrictions based on the card's type are ignored, though of course, you can only cast it at the time the ability resolves. Other restrictions are not ignored (such as "Cast [this card] only during your end step").

deleteme as xeratheenigma says, you can only cast Mind Grind for X=0, though say, your opponent has a Glimpse the Unthinkable in their graveyard, you may cast that during the first resolution of the trigger, and then when Wrexial hits the second time, you get to pick from the cards that are in the graveyard at that point.

The reason you couldn't cast a Mizzium Mortars on your opponents turn using snapcaster Mage is because casting a card using its flashback cost still follows all timing restrictions of the card with flashback

@Dallie Yeah my wording was a bit weird. I said when it triggers but I meant when it resolves.

Two spells from the graveyard. A sorcery still can't be cast instantly regardless.
I'm not positive about this, but I base my answer from the time I tried to snap a Mizzuim Mortars during my opponents turn, and I was told I couldn't cast Mortars
