Death for 0 or less toughness and the mutual removal of +1/+1 and -1/-1 counters are state based actions, and state based actions are checked and executed simultaneously, right before a player would receive priority. This means Strangleroot Geist is put into the graveyard at the same time as the +1/+1 counter is removed, meaning at the last moment he was on the battlefield, he still had the +1/+1 counter on him. This is important because Undying is a type of "leaves play" triggered ability, which depends on the state of the object as it last existed on the battlefield to decide how and if it triggers. Because Geist still had the counter when it was last on the battlefield, Undying doesn't trigger.

It will die. While +1/+1 and -1/-1 counters do null each other out, they only do so if the creature remains on the field (ie a non-lethal amount of -'s). It will have died with both -'s and a + counter on it, allowing neither Undying nor Persist(if you manage to get that on there somehow) to trigger
