What happens when I case Enslave on a tapped creature?

My opponent attacked with a creature, thus tapping it. On my turn immediately after, I used Enslave to gain control over that same creature. Since it came under my control after my upkeep was already over, does it stay tapped until my next upkeep?

Correct--it will also suffer from summoning sickness. That is why cards like Act of Treason specifically note that they are untapping the creature and giving it haste; otherwise you would not be able to get much use out of taking a tapped creature.
