Untapping an Attacking creature.

So lets say I have a Ghostly Touch enchanted to card:Gideon's Avenger can I use the untap ability on the avenger when it attacks? or will that pull it out of combat.

I believe it will work like you want it. Since tapping the creature is part of the attack you would be able to choose it as the target permanent and untapped it. It will remain in combat.

Tapping or untapping a creature does not remove it from combat. this works.

It will only remove the creature from combat if it was a card like Gustcloak Cavalier where it specifically says it removes it from combat. Once you attack with a creature, it will remain attacking until killed, removed from combat or until the attack phase ends.

It also is removed if it changes controllers.

Oh or if it gets Flicker ed. That will remove it as well.
